Phipps Conservatory and Botanical Gardens

Phipps Conservatory and Botanical Gardens in Pittsburgh, PA has provided a world-class garden experience to its visitors since 1893, encompassing 15 acres including a 14-room glasshouse and 23 distinct gardens. The campus includes one of the greenest buildings in the world. To encourage visitors to prepare and cook meals in the healthiest and most efficient ways possible, they converted an older building into a state of the art teaching kitchen.

What could be more energy efficient than induction cooking? Nothing. Induction uses magnetic energy to create heat within the cooking vessel itself instead of trying to transfer heat from the fuel to the pan. Results are total heat control with almost instantaneous response. We built into the front demonstration counter a 6 coil induction system completely flush with the stone countertop. What a nice clean install. Students each have their own portable induction unit to cook at their tables. Also built into the counter is refrigeration and a handsink. The rear line includes more upright refrigeration, a prep sink, commercial ventless dishwasher and a pair of double wall ovens.

Side prep stations and handsinks on each side of the room allow students to participate while learning. Student tables are solid butcherblock wood with adjustable height bases, enough to accommodate up to 36 students. Closed circuit video and an energy efficient HVAC system make this kitchen the WOW of the neighborhood!
